Passionfruit milk chocolate macaron. Such a Pierre Herme combination. Macarons sandwiched with milk chocolate passionfruit ganache. I tried Joycelyn Shu's macaron recipe this time, because I'm not very fond of the one I always use and given up (for now) on french meringue. It turned out to be quite successful, even though I got several cracked shells.

The passionfruit ganache, I think my ratio of liquid to chocolate was wrong. So it ended up more like a sauce even when I chilled it. I thought it was a gone case, until I started beating it and then it stiffened and thickened like magic! Hahaha okay not really, I probably whipped the cream in the ganache. But I didnt think it would behave like a whipped ganache since I replaced some of it with passionfruit puree.

3 different cocoa powders, all of different shades. Natural , dutch, dutch processed.
